Grilled Chicken, Rocket, Pear and Parmesan Salad

Ingredients
Serves: 4
- 300 g skinless chicken breast fillet
- 120 g rocket
- 1 punnet (250 g) cherry tomatoes, halved
- 2 medium pears, thinly sliced
- 50 g Australian parmesan cheese, shaved
- 1/4 cup balsamic vinegar
Method
- Grill chicken until golden brown and cooked through. Remove, cut into slices and keep warm.
- Arrange rocket in four serving bowls. Top with sliced chicken, cherry tomatoes and pear slices.
- Top with shaved parmesan and drizzle with balsamic vinegar.
